1 In a pot put leek, olive oil and salt.
2 Close the lid, turn on the stove on medium heat and cook it for about 10 minutes until the onions become see-through.
3 Add the pumpkin, carrots, peppers, potatoes, wine, some of the warm vegetable broth and boil for about 20 minutes until the vegetables soften.
4 Strain, put the vegetables in multi and mash them.
5 Add the rest of the vegetable broth slowly until we have the consistency that we want. Maybe we won’t need all of it.
6 Add some salt, pepper and lemon according to your taste.
7 Serve with crouton, lemon juice and Hello-V Italian Style Pasta topping.
